If you follow me on Instagram, you've probably noticed that I made this sweet potato daal the other day. I've actually made it several times over the years, but changed it a bit every time. This version is my favorite though - so sweet, hearty and flavorful. In other words, you have to try it!

And sorry for the lack of a good picture, you'll have to do with this video for now. But keeping it real, nothing is perfect or looks perfect all the time, haha. Just wanted you to have the recipe as soon as possible.

For the daal you will need:

  • 4 cloves of garlic

  • 3-4 cm fresh ginger

  • 2 red onions (you can use regular, if that is what you have)

  • 4 tsp curry powder (use mild or hot according to taste)

  • 3 tsp cinnamon

  • 1/2 - 1 tsp cardamom (season to taste)

  • 3 tsp turmeric

  • 2 tsp cumin

  • Black pepper

  • Salt

  • 400 g organic red lentils (soak a day or a couple of hours ahead of making the daal)

  • 3-4 small or 1 big sweet potatoes

  • 100-200 g kale (frozen or fresh)

  • 1 can organic diced tomatoes

  • 4 tbsp organic tomato paste

  • Juice of half a lemon

  • Water to "fry" (feel free to use coconut-, avocado oil or other non-inflammatory oils, if you feel like it)

Chop garlic, ginger and red onion into really small pieces, and water "fry" them in a big pot for a couple of minutes along with all the spices (some salt and pepper too). Meanwhile chop the sweet potatoes into bigger cubes, and rinse the presoaked lentils in fresh water. Add the chopped sweet potato and lentils to the pot along with the diced tomatoes and some more water (the water should just cover the content). Let simmer for around 45 minutes or until the sweet potato is tender, add chopped kale and let simmer for a couple of minutes. Add tomato paste and lemon juice just before serving and season to taste.

Serve over rice, with homemade naan or a salad. We just had it with homemade kale chips (recipe will follow) and a spinach salad - so good!

Bon appétit!

Let me know what you think and send me your remakes, either in the comments or on Instagram. Looking forward to hear from you!
